Hello, my dears! I hope that you had a peaceful weekend and that we’re all able to find some ease this week as we slip into December. We put up our Christmas tree on Sunday, so the season of sparkly lights (and endless Christmas music, much to James’s chagrin) has officially begun around here. My in-laws just left yesterday, and with a heavy work week ahead, I’m all about easy dinners right now (and honestly, all month long). I therefore thought I’d share a streamlined menu plan (with a shopping list) that features five easy dinners with minimal clean-up (but maximum flavor). From a sheet pan supper, to a one-pot soup, to a dead-simple slow cooker mainstay, to a skillet baked pasta, and finally a pantry meal, these five recipes are family (and budget) friendly and are all easy to make. I’ve also created a shopping list for you, to help lighten your load this month.
As I talked about in this newsletter, my intention for December is to simplify where I can. Let’s check in with ourselves often, allow rest when we need it, find ways to foster real connection, and reclaim the holiday season for ourselves, in whatever way feels authentic and true.
