Hello dear ones! While a couple of weeks ago I described how apples feel like the bridge between summer and fall, winter squashes root me firmly in autumn. They’re tough but loving—rough and dusty on the outside but (with a little coaxing) warm and sweet on the inside. I don’t think that there’s another vegetable that feels quite so nourishing—they’re at once grounding and up-lifting. Today I’m featuring some of my favorite savory squash recipes, from a baked pasta, to stuffed honeynut squashes, to a make-ahead grain and squash salad, to a stunning galette, and more. These are the kind of dishes that not only warm my belly but that also soothe my soul. I hope you’ll love them too.
