Knife skills class was great! I've taken a few in person classes knife classes and you summarized all the best tips I've learned over hours of lessons. Everyone should watch this! I wish that the names of cuts was more standardized in home cooking and recipe instructions; it's, such a useful thing to know. I bought myself a mercer culinary ruler to try and perfect my cuts and I still pull it out regulary to double check in recipes where cut matters. My good friend Chef Shauna, in teaching carmazlized onions always said "no rainbows; top, tail and though the root (I cannot cut an onion without thinking it) and I was delighted to see you teach the same method. Thanks for sharing this! PS Cannot wait for the new cookbook!!
